Pointers for Cruise Ship Galley Utility Position

The following text was composed by John Sparc in order to help future candidates applying for the position Galley Utility on cruise ships. It consists of questions and answers of the daily operations and knowledge which any future candidate needs to follow.

What is galley utility?

Description: The galley utility is primarily responsible for the maintenance and upkeep of the dish station in the galley. They will be washing all pots, pans, silverware, service items, and glassware for each meal served onboard (breakfast, lunch, and dinner).

Galley Utility is responsible for the handling, transport, and cleaning of food, food service equipment, utensils and areas in the galley and dish-wash area of the galley under the direction of the Executive Chef while maintaining proper galley sanitation and safety standards. 

What is USPH?

The United States Public Health Service (USPHS) is a division of the Department of Health and Human Services concerned with public health. 

What is the 3 bucket system? 

The Three Bucket System. The 3 Bucket System. This is a procedure for washing, rinsing, and sanitizing where a different bucket and sponge or mop is used for each task. 

What is galley on a cruise ship?

Galley / Kitchen Department... The kitchen is called the "galley" on a cruise ship, and it is one of the largest unseen areas onboard, with extensive staff and a variegated diversity of tasks to be performed in a non-stop working system forced by the specific needs of food service onboard large cruise ship. 

What are the danger zone temperatures?

The Danger Zone is the temperature range between 40 °F (4.4 °C) and 140 °F (60 °C) in which bacteria can grow rapidly. To keep food out of the Danger Zone, keep cold food cold, at or below 40 °F (4.4 °C), and hot food hot, at or above 140 °F (60 °C). 

What are the different types of PPE and their uses?

The different types of PPE (Personal Protective Equipment) are: face shields, gloves, goggles (including protective glasses), gowns, head covers, masks, respirators, and shoe covers. 

What is the correct ppm for sanitizes solution? 

Chlorine-based Sanitizers — provide at 50 to 100 ppm (do not exceed 200 ppm) 

When testing sanitizing solution that contains chlorine check the following test results demonstrates that the solution is at the correct concentration. Chlorine-based sanitizers: Dip the strip into the sanitizing solution, then immediately remove and compare it to the color chart. If it reads between 50 ppm and 200 ppm, then the concentration is fine. 

What is the correct ratio for preparing a sanitizing solution?

Use a sanitizing solution of 1 teaspoon of liquid chlorine bleach to one gallon of warm water (at least 75°F) (200 ppm solution) with clean wiping cloth. (Note:solution should be changed often).
