Disney Cruise Line has highlighted the work of Chef Martin, one of the culinary leaders responsible for developing menus aboard Disney Adventure.

Chef Martin oversees menus across the ship and played a major role in creating the food served at Mike & Sulley’s Flavors of Asia, a premium restaurant inspired by the Disney and Pixar film “Monsters, Inc.”

His approach combines traditional Asian cuisine with modern presentation and new dining experiences.

“What I planned and designed for Mike & Sulley’s is traditional cuisine with a modern twist in terms of taste, presentation and experience,” Chef Martin said.

His professional background includes experience with several Asian culinary traditions. Disney said this knowledge influenced the restaurant’s menu and made him a natural fit for the Disney Adventure culinary team.

Mike & Sulley’s Flavors of Asia offers four different Japanese dining experiences. These include a full-service steakhouse, a teppanyaki room, an omakase-style experience and an outdoor sushi and sashimi area.

The restaurant’s dishes include donako, beef tartare and scallops, with the culinary team placing attention on flavor, presentation and storytelling.

Developing a cruise ship menu is a complex operation. Chefs must consider ingredient availability, preparation space, food safety, dietary requirements and the number of guests served during each voyage. They must also train galley teams to reproduce dishes consistently.

Disney Adventure is the largest ship in the Disney Cruise Line fleet and operates from Singapore. Its dining program includes more than 20 restaurants and lounges, with menus drawing heavily from Asian and international cuisine.

Chef Martin’s work demonstrates the important role played by shoreside and shipboard culinary teams long before passengers sit down for their first meal. Menus must be tested, adjusted and documented before hundreds of galley and restaurant crew members can bring the final experience to guests.
